Hummingbird Muffins


Well, it's official… I'm registered to run the New York City Marathon this November! If you follow me on Instagram, you may remember this post- the first recipe I made from The Runner's World Cookbook, which I treated myself to after I decided to commit to the marathon. 

To make the recipe more gut friendly, I swapped the flour for Bob's Red Mill All Purpose Gluten Free Flour. The recipe also calls for oil, which I replaced by adding extra applesauce and pineapple Chobani. The substitutions were perfect- even Mike was enjoying the muffins! Due to copyright, I won't be post the actual recipe but you can find it on page 17 of the cookbook.


Mike's dad canned his own applesauce last fall with apples from their property!
