Buffalo Chicken Bites


Football season is officially here! This week, cooler temps have started to set in (it was 55°F this morning with a high of 75°F) and a few of the leaves are starting to change. It's finally turning into my favorite season!


Last week, a coworker brought in some Buffalo Chicken Bites that his wife had made. They were amazing! I knew Mike would enjoy them, so I found this recipe from Sweet Pea's Kitchen that I have adapted slightly. They were a little time consuming to make but worth the extra labor. Also, they are deceptively filling!

Recipe yields 10 1½-inch balls

INGREDIENTS
  • 1½ cups chicken, cooked and finely chopped
  • 4 Tbsp. Frank's Red Hot
  • 2 oz. cream cheese, softened
  • 1 cup sharp cheddar cheese, freshly grated
  • Chopped green onions, to taste
  • ½ cup all-purpose flour
  • 2 eggs, lightly beaten
  • 2 cups Cheez-It crackers, crushed
DIRECTIONS
  1. Preheat oven to 350˚F. Lightly grease a large baking sheet with non-stick cooking spray.
  2. In three shallow dishes, place flour in one, two beaten eggs in another and the crushed Cheez-Its in the last bowl.
  3. In a large glass bowl, combine chicken, cream cheese, hot sauce, cheddar cheese and green onions. Stir with a spatula to combine evenly.
  4. With you hands, roll some of mixture into a 1½-inch ball and place onto the baking sheet. Repeat until mixture is gone.
  5. In this order, dip each chicken ball into the flour, then the egg, then the Cheez-Its, then place back in it's spot on the baking sheet.
  6. Bake for 20 minutes. Let sit for 5 minutes, then serve with ranch or blue cheese dressing. Enjoy!
