Lemon Garlic Grilled Shrimp

With summer right around the corner and the patio open, it's time to officially fire up the grill! On weeknights I am all about maximum 'yum' with minimum cook time. After chopping the bell pepper and pineapple, these skewers can be assembled in a matter of 5 minutes. AND if you get the grill going first, you can eat within 10 minutes of prepping! Cheers to summer by the grill.

Serves 2

  • ½ pound large, cooked shrimp (peeled and deveined)
  • 1 red bell pepper
  • ½ cup fresh pineapple
  • 2 Tbsp butter, melted
  • 2-4 cloves garlic, minced
  • ¼ lemon, freshly squeezed
  1. Preheat grill to medium-high heat.
  2. Meanwhile, in a glass bowl, combine melted butter, garlic and lemon juice.
  3. Prepare skewers; brush with lemon-garlic-butter mixture. 
  4. Place skewers on the grill to warm. Flip after 3-5 minutes. Remove from grill and enjoy!
