Chocolate Covered Strawberry Footballs

In honor of my alma mater's first football game of the season tomorrow, I wanted to share my chocolate covered strawberry footballs. They are as delicious as they are cute and festive. GO HOKIES!!

  • Large strawberries
  • Semi Sweet chocolate chips
  • Wilton candy melts
  • Wilton piping bags
  • Parchment paper
  1. Wash and dry strawberries. Make sure strawberries are at room temperature before dipping!
  2. Heat semi sweet chocolate chips in a microwave safe mug (this was better than a bowl since it was deeper) then carefully dip the strawberries and place them on the parchment paper to harden. 
  3. Once the chocolate has hardened, melt the white chocolate candy melts in the piping bag. Carefully remove from the microwave and pipe the football laces onto the strawberry. Let chocolate dry, then serve and enjoy!

Frittata Breakfast Cups

Rushed for time in the mornings? These Frittata Breakfast Cups are a healthy "grab n go" options, loaded with protein and veggies to get your day started off right! One serving = 2 breakfast cups.

  • Cupcake liners
  • Carton of egg whites
  • Grape seed oil
  • Fresh spinach
  • Green onions, chopped
  • Cherry tomatoes, sliced in half
  • Yellow bell pepper, chopped
  • Asparagus, cooked and chopped
  • Freshly ground salt and pepper, to taste
  • Parmesan cheese, if desired, to taste
  1. Preheat oven to 350°F.  Line muffin tin with cupcake liners for easy clean up (and transporting).
  2. In a pan, sauté bell pepper, green onion, and asparagus in a little bit of grape seed oil. Add spinach; cook until wilted. Add tomatoes and cheese.
  3. Remove from heat and scoop even amounts into the cupcake liners. Fill with egg whites, until about 2/3 - 3/4 of the way up.
  4. Place muffin tin in the oven and bake for 15-20 minutes or until cooked and golden. Enjoy!
*NOTE: Store in an air tight container up to three days, in the refrigerator. Peel off cupcake liner and pop in the microwave for a few seconds to reheat.

Kale Salad

This salad was my first time I recall trying kale, about a year and a half ago, and absolutely loved it! It is great to bring as a side dish to a cookout, as the longer it sits marinating, the better it tastes! Additionally, it holds up well overnight. Some other ingredients I enjoy in this salad for variation are strawberries, blueberries, pine nuts and sliced almonds. Recipe adapted from Tone It Up!

  • Fresh kale, washed and cut into thin strips
  • ½ cup dried, unsweetened cranberries
  • ½ cup sunflower seeds
  • ½ cup red onion, diced
  • ½ cup cherry tomatoes
  • ½ cup feta cheese
  • Juice of one lemon
  • 2 cloves of garlic, freshly pressed
  • ¼ cup EVOO
  • ½ cup balsamic vinegar
  • Freshly ground salt and pepper to taste
  1. Mix kale, cranberries, tomatoes, nuts, onions in a glass bowl.
  2. In a separate dish, mix lemon juice, olive oil, vinegar, salt, pepper, garlic to make a dressing. Pour dressing over kale and toss to coat evenly.
  3. Refrigerate for at least 4 hours (overnight 6 hours or more is best). Before serving, toss in feta and enjoy :)

Homemade Pizza

Homemade pizza is becoming a favorite Friday night staple for my boyfriend and I. It costs about as much as a frozen pizza but tastes SO MUCH BETTER!! We have also gotten creative with our sauce and topping combinations.
Fresh is best.
Happy experimenting!

  • Fresh dough- I get mine from a local pizza parlor
  • Olive oil
  • Fresh garlic
  • Freshly sliced pepperoni- Thinly sliced from the deli is best!
  • Fresh mozzarella
  • Fresh basil
  1. Preheat oven to 475°F. Roll out your dough and set on a pizza stone. Place in the oven for three to four minutes. Remove from oven, leaving oven on. 
  2. Carefully place sauce on pizza- it will be hot! [*This pizza has sautéed garlic with olive oil as the "sauce"]. Add pepperonis and mozzarella. Place back in the oven for another 10-12 minutes, or until dough is golden and cheese is melted.
  3. Remove from oven and add fresh basil. Let it sit for about five minutes before slicing and enjoy! :)
