Arugula-Parmesan Salad

This is a simple salad to make with ingredients you most likely already have. Pair it with an entrée that is loaded with flavor, such as London Broil.

  • Arugula
  • Parmesan Cheese
  • Lemon
  • EVOO
  • Salt and Pepper

  1. Pour Arugula in a large bowl.
  2. In a separate bowl, pour a little bit of EVOO (I eyeball it), the juice of one lemon, salt and pepper, and whisk together.
  3. Pour the dressing over the lettuce, and using tongs, toss the lettuce so all are coated with the dressing. Sprinkle Parmesan on top and serve!
