Crab Dip

I've been looking for a great recipe for awhile. Not finding one I was thrilled with, I created my own dip from a few different recipes. It makes a great snack for the beach!

  • 3 six-ounce cans (a little over 1 pound) of crabmeat
  • 8 ounces Neufchâtel cheese, softened
  • ½ cup sour cream
  • A dollop of light mayonnaise
  • Juice of ¼ of a lemon
  • 1¼ tsp Worcestershire sauce
  • A few taps of Ground Mustard
  • A few taps of Old Bay
  • A few taps Garlic Salt
  • A few taps of Paprika
  • 2 handfuls of Mild Cheddar cheese
  • 1 handful Parmesan-Asiago cheese
  1. Preheat oven to 325°F 
  2. Open and drain the cans of crabmeat.
  3. In a bowl, combine all ingredients except for the crabmeat. Once all ingredients have been mixed, fold the crabmeat into the mixture.
  4. Transfer the mixture into a 1-quart baking dish.
  5. Bake 35-40 minutes or until edges are bubbling.

Agave Margarita

A margarita is my favorite warm weather cocktail. I came across this recipe in the May 2012 issue of Bon Appétit. What I loved about this particular version was the low sugar content (as opposed to using Triple Sec + Marg Mix). It tasted so refreshing! I hope you enjoy it as much as my girlfriends and I did :)

Yield: This recipe makes one cocktail. (Nutritional Info also found on the recipe link)

  • Kosher salt
  • Half of a lime, juiced +  ¼ for garnish
  • ¼ cup of good quality, clear tequila
  • 2 tablespoons agave nectar 
  1. Pour kosher salt into a small dish.
  2. Rub 1 lime slice over half the rim of a glass. Dip rim of glass into salt.
  3. Combine tequila, agave syrup, and juice in a cocktail shaker; fill with ice and shake well.
  4. Strain into prepared glass. Garnish with second lime slice. Enjoy :)

Easy Grilled Chicken

This recipe is great if you don't have time to marinate chicken before hand.

Preheat the grill to medium-high heat. Meanwhile, add a dry rub to both sides of the chicken breast. I used McCormick Grill Mates Montreal Chicken.
Place the chicken on the grill and cook for 6-7 minutes on each side.

Cut into chicken to make sure it is fully cooked before serving :)

Serve with Grilled Asparagus and an Agave Margarita!! :)

Grilled Asparagus

I love asparagus! This recipe is really simple!

Make a basket out of aluminum foil. Place the asparagus in it and drizzle with teriyaki sauce.
 Place on the grill for 12 minutes, tossing the asparagus with tongs every few minutes.

Serve with Easy Grilled Chicken and Agave Margaritas!

Parmesan Baked Asparagus

  • Fresh asparagus
  • Balsamic Vinaigrette
  • Parmesan Cheese
  1. Preheat oven to 400°F
  2. Wash and cut the bottoms off of the asparagus
  3. Spray the baking sheet with non stick cooking spray and arrange asparagus in a line
  4. Drizzle with balsamic vinegar. Place in the oven for 7 minutes.
  5. Take the asparagus out (watch your eyes when baking with vinegar!) and top with desired amount of Parmesan. Place back in the oven for 5 minutes.
Enjoy with Lean Turkey Burgers!

Green Monster Smoothie

I was a little skeptical at first, even though I enjoy all of the ingredients and have them on hand at all times. To my surprise, it is really good- tastes just like a peanut butter banana smoothie!
Adapted from Iowa Girl Eats

  • 1 frozen sliced banana (peel and slice THEN freeze :) )
  • 2 Tablespoons natural peanut butter
  • ¾ (6 oz.) 0% Plain Chobani Greek yogurt
  • 1 cup unsweetened Vanilla Almond Breeze
  • 4 cups Spinach
  • 1 scoop Vanilla Whey Protein
  1. Combine all ingredients in a blender until desired consistency then enjoy :)

*This ended up making about 20 oz, so I saved half for the next time!

Healthy Banana Split for Breakfast!

  • 1 ripe banana
  • 3-4 medium strawberries
  • 6 oz. 0% Plain Chobani Greek Yogurt
  • Fresh, local honey
  1. Slice the banana in half lengthwise and spoon the Greek yogurt on top.
  2. Top with fresh strawberries and drizzle with honey.
