Protein Pancakes

I cooked these after a workout so I could have bulging muscles. I made two but was only able to eat one since it was so filling! The recipe is from Tone It Up!- you can watch the recipe video here.

They are easy to make and all you need is about 5 minutes!

  • ¼ cup egg whites
  • 1 scoop vanilla protein powder
  • 2 tbs unsweetened vanilla almond milk
  • 1 scoop of cottage cheese
  • A few taps of cinnamon
  • 1 tbs flaxseed (I used ground flaxseed)
  • ½ a banana, mashed (then set aside- don't combine yet)
  • Handful of fresh berries
  • Agave
  1. After above ingredients are mixed together add ½ banana (mashed)- mash first, then add!
  2. Add a handful of fresh or frozen blueberries (I added frozen blueberries from Trader Joe's).
  3. Pour into a pan that has been sprayed with olive oil cooking spray- Medium heat.
  4. Cook one side until it bubbles. Flip and cook the other size until the middle is done.
  5. Top with fresh berries and agave.

Summer Sangria

My cousin, Michelle, and I created this delicious recipe after her return from Spain!

  • One bottle of dry rosé wine (we chose a Spanish rosé)
  • ¼ cup peach schnapps
  • ¼ cup Pellegrino
  • ¼ cup organic sugar
  • Fresh strawberries, peaches, and blueberries
  1. Slice fruit into cubes.

  • Pour wine into a pitcher; add the sugar and half of the fresh fruit; stir until dissolved.
  • Place the remaining fruit in the freezer and place the pitcher in the refrigerator for 2-3 hours.
  • After 2-3 hours, take the pitcher and the frozen fruit out. Add the frozen fruit and the Pellegrino to the pitcher.
  • Serve immediately and enjoy!

  • We enjoyed fresh mangoes and Greek Salad with our Sangria.

    Caprese Salad

    This is going to consist of most of my summer dinners from now until September-ish.

    Fresh slicing tomatoes from the local produce stand, mozzarella, and fresh basil with salt & pepper, EVOO and Balsamic Vinegar drizzled on top.

    Healthy. Easy. Yummy.
