Creamy Chicken Pomodoro

Last night Mom and I cooked this new dish together. It was a lot of fun and very delicious/filling!

Here is the recipe from Kraft Foods.

Our modifications:
  • We quartered the chicken breasts for faster cooking
  • 5 cloves of garlic instead of 4
  • Half of a small onion (the recipe didn't call for any onion)
  • ¾ package of Neufchatel Cheese (1/3 less fat than cream cheese) [WE LOVE CHEESE!]
  • Whole Grain penne pasta
  • ¼ cup Parmesan Cheese (again with the cheese...)
  • We did not have fresh basil (it's growing!) so we substituted 1 Tbsp. dried basil leaves
  • The chicken and sauce looked like enough to serve six, but you might need to cook more pasta to get the full six servings!
I'm no wine connoisseur by any means, but this dish paired nicely with New Kent Winery's 2005 Chardonnay. Very smooth.
