Chicken Cordon Bleu Casserole

I came across this recipe from Good Housekeeping while in college. One weekend my roommate, Kelley, and I came home to visit my family and we decided to make this dish for them. It was so delicious and very simple!

  • 1 pound Baby Red Potatoes, cut into 1 inch chunks
  • 1 pound Chicken Breast Tenderloins, cooked and diced
  • 1 bag (12 oz.) Broccoli florets
  • 1 can (10¾ oz.) condensed Cream of Chicken Soup
  • 8 oz. cooked ham, cut into half inch chunks. (I am almost positive we substituted for Hillshire Farm deli ham)
  • 1 cup shredded Swiss Cheese
  • ½ cup milk
  • 2 tablespoons chopped fresh parsley leaves
  • 1 garlic clove, finely chopped
  1. Preheat oven to 350°F
  2. In a microwave-safe large bowl, place potatoes and 2 T. water. Cover bowl with wax paper and microwave on high 3-4 minutes or until potatoes are fork-tender. Stir.
  3. Add chicken and all remaining ingredients to potatoes and toss to mix well. Transfer mixture to 9x13" baking dish.
  4. Bake uncovered for 50-55 minutes or until edges are bubbling and cheese begins to brown. Enjoy!
