Chicken Portfolios



My mom has been making these as far back as I can remember. They are an easy weeknight dinner option and are always a hit!

Serves 4

INGREDIENTS:
  • 2 cups diced, cooked chicken
  • 4 oz. cream cheese, softened
  • 2 tablespoons butter, melted
  • ¼ cup almonds, chopped
  • 1 can Pillsbury crescent rolls
DIRECTIONS:
  1. With a mixer, beat cream cheese. Add melted butter, almonds, chicken, and salt & pepper to taste. You can also mix by hand to make sure everything has been incorporated.
  2. Separate the crescent rolls into rectangles (2 triangles) and seal the perforations.
  3. Spoon mixture into the middle of the dough and bring both sides together. Seal middle seam and edges well.
  4. Bake at 325°F for 10 minutes, or until golden brown.
